Sipon Amfora 2021

A new project for young Matic.

The amfora used for Šipon and Blaufranisch were buried underground, and the grape skins and juice macerated over the winter season before being unearthed and left to rest in the cellar before bottling.

Šipon in this style is rustic and raw.

Edgy flavors of grilled peaches, slight smoke, with earthy notes.

Chewy tannins and a long acid driven finish.
